The Quest for the Perfectly Seared Scallops

As a professional food photographer and someone who genuinely loves to cook, I've spent years trying to master what many chefs consider one of the most deceptively difficult foods to prepare. Scallops are very simple—until you try to cook them perfectly.

Getting a beautiful golden crust while keeping the center tender and buttery is a balancing act. The pan has to be at just the right temperature. The scallops need to be dry and delicately seasoned. Timing has to be on point. Even after making them countless times (typically 1-2 times a month), I'm still chasing that flawless sear every time I step into the kitchen.

That's part of what makes cooking so rewarding (and oftentimes tortuous). There's always something to improve.

Photographing Scallops That Were Cooked to Perfection

Recently, I had the opportunity to photograph one of the signature scallop dishes for Sovereign, the newest restaurant at ilani Casino in Ridgefield, Washington.

From the moment the plate arrived, I knew I was looking at something truly special.

The scallops had the exact sear and caramelized crust I dream of achieving. The sear was rich and even, creating beautiful texture and color while allowing the natural sweetness of the scallops to shine. Every element on the plate was thoughtfully arranged and visually balanced, making the presentation just as impressive as the cooking itself.

As someone who spends plenty of time trying to recreate that same level of execution at home, I couldn't help but admire the craftsmanship behind the dish. The sear, the overall presentation, and the pairing with the pear cognac puree were true perfection.

Great Food Photography Starts with Great Food

One of the things I enjoy most about food photography is telling the story of a dish through light, composition, and placement.

When a chef executes a plate this well, my job becomes about preserving all of the little details that make someone immediately want to take a bite—the crisp sear, the delicate textures, the vibrant garnishes, and the careful presentation.

Food photography isn't simply documenting a meal. It's capturing the passion, precision, and creativity that went into preparing it.

The scallop dish at Sovereign was perfection at every level.

Why Scallops Continue to Inspire Me

I enjoy cooking everything from homemade pizza and smoked meats to fresh seasonal dishes, but scallops continue to challenge me in the best ways possible.

Every attempt teaches something new.

Sometimes it's experimenting with different oils and drizzles. Other times it's discovering how a different pan, a slightly drier surface, or just thirty extra seconds can completely change the final result.

And of course, there's always the search for the perfect pairing.

Whether it's a silky puree, sweet corn, citrus beurre blanc, crispy pancetta, fresh herbs, or seasonal vegetables, scallops offer endless opportunities to create an unforgettable dining experience.

That's what makes them one of my favorite foods to cook—and one of my favorite dishes to photograph.

Bringing Food to Life Through Photography

I love working with chefs, restaurants, breweries, and wineries throughout Southwest Washington and the Portland area to create imagery that highlights their craftsmanship.

Every carefully prepared plate represents hours of planning, technique, and creativity. My goal is to produce photographs that communicate that same level of quality to potential guests.

Photographing the beautifully seared scallops at Sovereign was one of those assignments that perfectly combined two of my passions: cooking and photography.

And yes... after photographing them, I went home even more determined to keep chasing that perfect scallop sear in my own kitchen.
